Mini Quiche

This is from my friend Sharyn.  I typically give quiche a hard pass, but she made me one without cheese, and it was surprisingly good!  My plan is to make and freeze these, and then the kids can pull them out of the freezer and reheat them in the air fryer on school mornings. 

Ingredients:

1/2 cup    butter

            eggs

1/2 cup    Bisquick

1/2 cup    milk

1 cup        grated cheese

3/4 cup    chopped spinach

salt and pepper to taste

1 cup        cooked and crumbled bacon

(any other desired toppings)


Directions:

Add butter, eggs, Bisquick, milk, salt, and pepper to blender and blend for 1 minute.  Add cheese, bacon, and spinach.  Pour into 12 greased muffin tins.  Bake at 350 for 20 minutes.

Janae's Oatmeal Waffles

 2 cups milk

2 cups quick oats

1/3 cup oil

1 Tbsp. sugar (optional)

1/2 tsp. baking powder

1/2 tsp. salt

3 eggs

3/4 cup flour


Warm milk on stove; add to oats.  Add oil, sugar, baking powder, and salt.  Separate eggs; put yolks in mixutre.  Add flour, then beat egg whites and fold into batter.  Cook.

Janae's Gingerbread Waffles

1.5 cups all-purpose flour

1.5 tsp. baking powder

1/2 tsp. baking soda

1 tsp. ground cinnamon

3/4 tsp. ground ginger

1/4 tsp. ground nutmeg

pinch ground cloves

1/2 tsp. salt

2 eggs

1/3 cup granulated sugar

3/4 cup milk

1/2 cup molasses

1/4 cup butter, melted


Preheat waffle iron.

In a large bowl, combine flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.

In a separate bowl, beat the eggs and sugar together until thick and foamy.  Stir in the milk and molasses.  Add liquid mixture to the dry ingredients and stir until well-combined.  Slowly fold in the melted butter.

Spray hot waffle iron with nonstick cooking spray.  Follow the manufacturer's directions for your waffle maker to measure batter and cook waffles until finished.  

Top waffles with powdered sugar, whipped cream, and fresh fruit, or your favorite syrup.

The number of servings varies depending on the size of the waffle iron.

Whole Wheat Waffles

For my family (including Grandma and Grandpa), I typically have to 4x this recipe.


Ingredients

  • 1 1/2 cups (170g) White Whole Wheat Flour (6 cups)
  • 2 teaspoons baking powder (2 Tbsp + 2 tsp)
  • 1/2 teaspoon salt (2 tsp)
  • 2 tablespoons (25g) granulated sugar (1/2 cup)
  • 1 large egg (4)
  • 1 1/2 cups (340g) lukewarm milk (6 cups)
  • 5 tablespoons (71g) melted butter or 1/3 cup (67g) vegetable oil (1 1/3 cup)

Instructions

  1. Preheat your iron while you make the waffle batter.
  2. Whisk together the flour, baking powder, salt, and sugar.
  3. In a separate bowl, whisk together the egg, milk, and butter or oil.
  4. Mix together the wet and dry ingredients, stirring just until combined. The batter will be a bit lumpy; that's OK.

Hootenanies (aka German Pancakes)

The kids love these.  They DEVOUR them.  We double the recipe, no questions asked.

Ingredients
  • 6 eggs
  • 1 cup milk
  • 1 cup flour
  • dash of salt
  • 1 tsp vanilla
  • 4 Tbs butter
Instructions
  1. Preheat oven to 425 degrees F. As oven preheats, place the butter in 9x13'' baking dish and put in oven for the butter to melt.
  2. Place the eggs, milk, flour, salt and vanilla in a blender; cover and process until smooth. Pour batter into the baking dish with the melted butter. Bake, for 20 minutes or until golden brown and puffy.
  3. Remove from oven and sprinkle generously with syrup and powdered sugar or fresh lemon juice and powdered sugar.

Crepes

This recipe is from my friend Janae.  She is the master of crepes.

1 cup flour
2 eggs
1 cup milk
1/4 teaspoon salt
2 tablespoons oil
1/2 teaspoon vanilla

Blend until smooth. 

Makes about 15 crepes.

Chocolate Chocolate Chip Zucchini Bread

I got this recipe from my good friend Alona.  It is SO GOOD!

3 eggs
2 cups sugar
1 cup oil
6 Tbsp cocoa
2 cups grated zucchini
1 tsp vanilla
3 cups flour
1 tsp salt
1 tsp cinnamon
1 tsp baking soda
1/4 tsp baking powder
1 pkg chocolate chips (I prefer semi-sweet, but you can't go wrong with milk chocolate chips, either)

Beat the eggs, and then add the rest of the wet ingredients.  Once they are well combined, add the dry ingredients, and then add the chocolate chips.

Bake at 325 degrees for 1 hour.

Stephanie's Sour Cream Coffee Cake

Heat oven to 350
Bake 2 8x8 pans for 20-25 minutes

2 sticks butter
1 1/2 cups sugar

Mix

3 eggs

Mix

1 tsp. vanilla
1 cup sour cream

Mix

1 tsp. baking soda
1 tsp. baking powder
2 1/2 cups flour

Mix

Topping:

1 cup brown sugar
1 Tbsp. cinnamon
1/2 cup pecans

Caramel-Glazed Pear Cake (Emily White)

Pear Cake

4 ripe Bartlett pears, peeled and diced (about 3 cups...you can use and puree the equivalent in canned pears)
1 Tbsp. sugar
3 large eggs
2 cups sugar
1 1/4 cups vegetable oil
3 cups all-purpose flour
1 tsp. salt
1 tsp. baking soda
1 1/2 cups pecans, coarsely chopped (optional)
2 tsp. vanilla extract
Caramel glaze (see below)

If using fresh pears, toss pears with 1 Tbsp. sugar.  Let stand 5 minutes.

Beat eggs, 2 cups sugar, and oil at medium speed with an electric mixer until blended.

Combine flour, salt, and baking soda.  Add to egg mixture, beating at low speed until blended.  Fold in pears, pecans, and vanilla.  Pour batter into a greased and floured 10-inch Bundt pan.

Bake at 350 degrees for 1 hour (or more) or until a wooden pick inserted in center comes out clean.  Remove from pan and drizzle caramel glaze over warm cake.

Caramel Glaze
(makes 1 1/2 cups)

1 cup brown sugar
1/2 cup butter
1/4 cup evaporated milk

Stir ingredients together in small saucepan over medium heat.  Bring to a boil and cook, stirring constantly, 2 to 3 minutes or until sugar dissolves.
